Hello Breakie!



I am the biggest supporter of eating breakfast in the morning.

Here's why:

I aim for whole grains, a serving of fruit and vegetables and a good protein. And coffee. For additional protein and omega-3's & 6's you can add flax seeds to the batter. Top with fresh berries, nut butters, yogurt, etc.

Eat.

Whole Wheat Waffles

Ingredients:
1-1/4 cups whole wheat flour
1 tbsp baking powder
3 tbsp sugar
3/4 tsp sea salt
2-3 egg yolks, well beaten
2-3 egg whites, stiffly beaten
1 1/4 cups milk / soy milk
3 tbsp olive oil

Sift together the first 4 ingredients (whole wheat flour through salt).

Combine and beat the egg yolks, milk and vegetable oil. Add this to the flour mixture, blend. Fold in the stiffly beaten egg whites.

Bake in waffle iron.

Makes a lot:

I love freezing the leftovers and reheating in the toaster for time crunched mornings.

Lazy Saturday



Mmmmmm.

Two new magazines with fall fashion.

Delicious lunch.

Lazy Saturday.

For awesome lunch:

Saute 1 Japanese yam (cubed 1/2" pieces), 1/4 cup pine nuts in olive oil until potatoes are slightly soft and browned.

Add one bunch chopped beet greens (or other leafy green) 1 tsp fresh rosemary, salt and pepper to taste and cook until wilted.

Put in bowls and top with a light squirt of lemon juice and crumbled feta.
